Characteristic

History of Kyoto cutlery began when skillfull cutlery craftsmen moved to Kyoto along with relocation of the capital from Nara. Rich natural resources, such as soil around Fushimiinari Shrine and clean water, as well as other materials were availble within the region. And this resourcefulness contributed significantly to the development of cutlery Industry.  


The Kyoto Yoshisada Cutlery has a history for over 300 years. The name "Yoshisada" was originated from Fujiwara No Yoshisada who lived in Yamashiro area located in the south of the central Kyoto. Apparently, his first name "Yoshisada" passed down through generations. People became to recognize it as a name of reliable cutlery rather than some one's name.
Yoshisada is the one of a few cutlery craftsmen ateliers left in Kyoto.  
Cutlery from Yoshisada has been used and loved by artisans in various field of businesses including Cooking, Gardening, Straw Mat Making and Fan Making.  

Care method

After using a knife, please wash with either hot water or water, and wipe the blade with a soft cloth. It is important to keep the blade dry.

To keep the sharpness, we recommend to polish the knife whenever the knife gets dull.
Please consult with a specialty store how to polish and proper tools to be used.

Also it is highly recommended to bring the knife to a specialty store and polish it once or twice a year.

If your knife has a two-edged blade, please sharpen both sides of the blade for the same number of times.  

If your knife has a single edged blade, please polish the surface of the blade from top to the bottom until you find the burr on the back of the blade. Please softly polish a knife twice or three times to remove the burr.

Handling instructions

Do not use a knife other than cooking.

Do not use this knife for a hard object. Otherwise, it will cause a broken blade, a crack in the blade.

We recommend to use a wooden cutting board. Please be aware that banging knife blades on the cutting board will break blades and it is also dangerous.  

Do not put your hand or finger directly on blades. 

Keep a knife away from infants.
