あごの部分の処理が荒く、裁断跡が残ったままでした。せっかく良い素材を使っているのに処理が荒いのはもったいないです。

アジを3枚におろしてみました。出刃に負けない切れ味と刃の重さがあるので、頭を落とすのも力はいらず、刃が抵抗なく身にスッと入っていくので難なくさばけました。 とてもすばらしい切れ味で、さすが無垢鋼だけありとてもよい品物です。ぜひ1本持っておきたい包丁です。 ただ、自分の研ぎの技術でこの切れ味を維持できるのか、ちょっと不安になっています。
