Effects of microclimate near Como Lake (50 km), originates in Lake Como (microclyment) and more rounded out and becomes soft. The soil is well drained sandy loam. Harvest is 5 to 10 days. Fermentation while sinking of CAP and Peel involves approximately 10 days maceration. Aged using the traditional style, 12 months 5000 L barrels, then 6 months stainless, last 6-8 months bottle, total aged 24 months. It is reminiscent of violet aroma, flavor rich and sustainability, elegant, balanced taste.
